Roasted Poussin
Roasted some Poussin over the weekend. Although it's not necessarily a game bird, this was the closest thing I had to one and so we made do. It was simple. Washed and patted it dry. Then thru in a garlic clove in the cavity, (wished i had some thyme) salt and peppered the exterior and roasted it at 375 for 25 minutes. Let rest for another 10. Perfection! Made a pan sauce with the fond from the roasting pan. It was GOOOOD!.
